Ok I am going to try and weigh in on this subject. I see the value of each. I think it depends on the person eating the food’s perceptions and past experiences as well…. My mother thinks spam is fabulous so good quality ingredients would be lost on her. You however, have a very educated palette and you expect more from your food. But on the other hand you can have quality ingredients and have me cook them and the expense of the good ingredients again would be lost…. so being the Libra that I am I choose both… I think you need a balanced blend of good ingredients and good technique… that equals good food…
This may be off topic, now I haven’t gone all the way over to your side yet.. but I do tend to cook a lot better these days.. I am still a recipe cooker and if it has too many steps I shy away but it can be more than 3 ingredients now!
